3-Memory Speed|||1. High memory capacity (512mb+) is only needed when playing at higher resolutions (1680x1050 & 1600x1200 or higher). Though, there are a few games that require 512mb+ to put the setting to Ultra High Quality (GRAW2 and UNREAL).
If you're gaming at 1024x768 or 1280x1024, 256-320mb models should suffice.
2. Generally, the newer the GPU design the better the performance for a given class of cards. For instance, the 8600gt is quicker in newer, shader intensive games than the 7600gt. The 8800-series Nvidia's absolutely trounce every other card out there.
If you want to game at 1080p resolutions (1920x1080) you must have a 8800gts 640, 8800gtx/ultra, or the 2900xt.
3. Memory and core speeds do play a part, but again, the newer (GPU) equivelent level card will always be faster. Also, low-end cards use a 128-bit memory interface, while mid-to-high use 256-bit or higher (this increases memory bandwidth) Many enthusiasts and even the manufactures overclock their cards (memory and core).

This is a tough question to answer. The answer is dependent upon what kind of game you will be playing.
Most of the time, the GPU is the most important factor.
